Turkey Club Crescent Ring

Blame it on the pregnancy but this sounded really good a couple of weeks ago. However, I didn't have a recipe so I combined two or three and created my own.




Ingredients:
1/4 c. Hellman's Real Mayonnaise
1/2 tsp. garlic powder
1 Tbsp. parsley
2 tsp. mustard
2 Tbsp. soft cream cheese
1 c. sharp cheddar cheese, shredded
1 tsp. apple cider vinegar
1 1/2 c. chopped broccoli
1/4 c. chopped tomatoes
2 c. diced turkey
1 c. bacon, crisp and crumbled
salt and pepper to taste
2 rolls of crescent dough

Directions:
(1) In a large mixing bowl combine the mayonnaise, garlic powder, parsley, mustard, cream cheese, cheddar cheese and apple cider vinegar.
(2) Add turkey, bacon, broccoli and tomatoes to dressing.
(3) On a large cookie sheet unroll crescent dough and separate into triangles. Place on ungreased cookie sheet forming a ring with pointed ends facing outer edge of pan and wide ends overlapping. Lightly press wide ends together.
(4)Scoop turkey mixture into wide ends of ring. Fold points over filling and tuck ends under
(5) Bake at 375 degrees for 20 minutes or until golden brown.

Turkey and Wild Rice Soup

Where's the 6-star rating when I need one? Because this soup deserves all 6 stars I would give it. SO GOOD! My beloved mother-in-law made this soup for our Christmas Eve gathering and I've been craving it ever since. I just thought it would be so hard to make plus I'd have to roast that turkey and all. Not the case at all. Simple soup to put together - took less than 30 minutes and tasted like I ran out to SoHo and brought it home. Yeah, it's that good. (Recipe is also from Taste of Home as well as this picture)

Ingredients:
1 medium onion, chopped
2 celery ribs, diced
2 carrots, diced
1/2 cup butter or margarine
1/2 cup flour
4 cups turkey or chicken broth
2 cups cooked wild rice (I used Uncle Ben's Sun dried Tomato Wild rice - 1 pkg)
2 cups half and half
2 cups diced cooked turkey
1 tsp. parsley flakes
1/2 tsp. salt
1/4 tsp. pepper

Directions:
(1) Open the package of Uncle Ben's wild rice and cook according to package directions. Set aside. (2) In a large kettle, saute onion, celery and carrots in butter/margarine until onion is transparent. Reduce heat.
(3) Blend in flour and cook until bubbly. Gradually add broth 1 cup at a time stirring constantly.
(4) Bring to a boil; boil for 1 minute.
(5) Reduce heat and add wild rice, half and half, turkey, parsley, salt and pepper.
(6) Simmer for 20 minutes..
(7) Serve hot with artisan bread.

Helpful Hints:
(1) I just used my left over turkey which made it even simpler!

Turkey Breast in a Crockpot

A month ago I had the opportunity to visit my buff friend Amber. One of the reasons she's so buff is because she eats well. She cooked us up a wonderful feast which included this turkey. I couldn't believe she did it in a crock pot of all things. The turkey came out perfect!

Ingredients:
1 small Turkey or medium sized turkey breast, thawed
3 cups water

Directions:
(1) Place thawed turkey breast in crock pot.
(3) Pour 3 cups of water over turkey.
(4) Place lid on crock pot and turn to low. Cook for 8 hours or until meat thermometer reads 160-165 degrees.

Helpful Hints:
(1) Amber used a bone-in turkey breast which was larger and had to cook the entire 8 hours. I used a 3 lb. boneless turkey breast which was ready in 6 hours. So it's important to use the meat thermometer to ensure proper cooking time.
(2) I was also able to use the juices for a real nice gravey as well.
